Cow's milk is collected at an average temperature of 37°C, the body temperature of the animal. When the milk first arrives from healthy cows, finding harmful micro organisms is rare. However, since fresh milk is an excellent growth medium for bacteria, the milk must be protected against contamination right after milking. When fresh milk is stored and cooled immediately, at a temperature of around 3°C, the growth of bacteria will be minimal.
